And We're Off!

Hello Highway 99, it's been awhile...


I am off on a journey, one that both excites me and makes me sad. I am driving my daughter to her new apartment, in a neighboring state, where she will start her new career (after finishing special training with an A average, woo!), and live in the same city as her betrothed, her beloved, her future cleaved one.

She is leaving, in November she is cleaving.

So this is it.

Saying good bye to how the family was, and welcoming change once more.
Her twin isn't having the easiest time with this either.

I expect great things, great growth, and new adventures for her. I expect great things here too, for her sister, to grow and change as well. I completely expect tears, and anger, and lots of phone calls, and you know, we will all survive.

Life is a journey.
It would be a mighty boring one if nothing ever changed.

Thankful Ten Tuesday, Truth

I am in a weird spot. I am struggling daily, I am needing to listen to my own preaching. But I will succeed and I will not fall into the well again.

PAINFULLY TRUTHFUL TEN:

1. I am thankful the collections agency that is after us only calls 10-12 times a day, not 20-30.
2. I am thankful that the energy "earth saving" light bulb that blew up in my dining room ,that I cleaned up unknowingly, didn't poision us from all the mercury it apparently uses.
3. I am thankful for nearly bursting into tears all the time, because it means I am still alive, and my heart hasn't turned into a stone yet, or again.
4. I am thankful for crazy weather, because it takes my mind off other things to look at weird slush/snow falling followed by sunshine 30 minutes later.
5. I am extremely thankful for my husband's jobs.
6. I am thankful my husband is willing to work outside his field of expertise, for a fraction of what he is worth, or used to make.
7. I am thankful for a safe,soft, warm place to sleep at night.
8. I am thankful for food to eat, even if it isn't the healthiest, or wide in variety.
9. I am thankful for steadfast, loving family and friends that help bring joy into my life.
10. I am thankful to my creator that I was made with a purpose, that I have found Him, and my path here on earth. The road might be hard right now, but I am on the right road, and becuase I am certain of it, it makes it easier to keep fighting to go farther.

The other day Spencer finished up Social Studies and moved on to another subject. I asked him what he had learned,
"The three branches of government"

"What are they Spencer?"

"Legislative"

"Yes."

"Judicial" (Which he first pronounced, judge-i-cal)

"Judicial, and the third one?"

"Executionist, no, executional"

Pause.


"Yep"*
















*I did indeed correct him.

Thankful Ten Tuesday! GREEN!!

HAPPY BIRTHDAY ALYSE!!! (Yesterday)



Green is a popular color today.
I am thankful for (in no particular order):

1. Plants, and the oxygen they supply!
2. Trees, for their beauty, shade,and fruits.
3. Greenbacks, yep, I do not find my joy nor strength in money, but it takes money to live here in this world, so I am thankful when some comes my way!
4. Exotic birds. I don't want one in my home, but they are so beautiful.
5. Snakes, lizards, and other reptiles, that keep my son occupied and fascinated for hours.(Again, don't want them in my home).
6. Grass, God's carpet.
7. SALAD!!!!! Yum.
8. Cucumbers, zucchini, broccoli, spinach, green beans, limes and more!
9. My eyes, my mom's eyes, other people I love with green eyes.
10. That little stripe in Ande's mints, yummy.

The search is on. How does one speak something about the couple, stay within budget, and still give something that would be appreciated to those that make the effort to come to a wedding?

Breakfast on the Go!

My husband needs breakfast everyday. I noticed the granola bars flying out of the house at an alarming rate when my son spoke up. Daddy sometimes eats 2 on the way to work.
And he calls that breakfast? I don't think so.
Do to economic times, due to diabetes, and due to an in general feeling of "I don't think so", I created the following recipe. I make it Sunday night and put it in the coldest part of the fridge. In essence it creates 6 "sandwiches" that are a cross between an egg sandwich,french toast, an omelette, or a breakfast casserole.

12 slices bread.
12 eggs, or equivalent
3 cups milk
butter
salt and pepper to taste.
Fillings:
Cheese, lunch meat, left over chicken, sausage, bacon, any left over meat, onions,salsa,peppers, goat cheese or cream cheese,basil or other herbs, chili powder, cumin etc.

Pre-heat over to 350.
Use non stick spray, coat a 9 x 11 pan
Lay 6 slices bread down flat.
Add toppings, chicken and salsa and cheese for example. Make them like sandwiches, make sure to place a little shredded cheese on top of fillings, it helps bind it together.
Place 2nd slice of bread on each, line them up like a sandwich.
Whisk eggs and milk until well blended, add spices if you are using any...go light on salt if your fillings are salty (ie: bacon)
Melt a bit of butter and drizzle on top bread slices, then pour egg mixture over all, making sure all gets wet. Tip pan back and forth a bit to evenly distribute if needed. (If using Texas toast thickness bread add an egg or 2 and a little more milk)
Sprinkle with grated cheese, cover with foil, bake 60 minute. At this point you will have to uncover it and check for doneness. Depending on your filling it may need another 15-20 minutes.

Let cool, cut into 6 sandwiches. Theses are easy to heat up or eat cold, and grab and run out the door. Each serving gives you 2 eggs of protein and 1/2 cup of milk, plus whatever goodness you put inside. A whole can fill a man, or a growing boy.

For health reasons we use more egg whites than whole eggs, and whole wheat read, and lean fillings.

Thankful ten for Fall, no particular order.

1. The break of Summer heat, it's such a relief.
2. The colorful explosions of trees scattered throughout my neighborhood.
3. Crunching fallen leaves.
4. The return of jeans, boots, and long sleeves.
5. Pumpkin, squashes, sweet potatoes, and broccoli.
6. New school supplies...even if I am not in school.Oh,the paper. Oh,the pens!
7. Crisp air.
8. Enjoying hot tea again.
9. This year's Fall will include a wedding.
10.Fuyu PERSIMMONS!

My summer themed thankful list:

1. Swimming.
2. Water sports, being around water, in it, on it...
3. Looooooooong daylight hours.
4. Sandals or bare feet!
5. Sun hats
6. Fresh and amazing grapes, watermelon, plums, peaches, apricots.
7. Fresh corn on the cob! Zucchini, tomatoes, green beans, cucumbers.
8. My Birthday!
9. Vacations! Travel, lakes, relaxation, family time!
10.Outdoor dining.
