Easy Emergency Pumpkin Pie
Or, for not such an emergency.
The following recipe is great for anyone watching their fat, or sugars, or waistline. This is a very diet friendly version or "pumpkin pie". It is also super easy to make, and ready in a jiffy if you are pressed for time. I used this recipe last year because I was on a very specific eating plan at Thanksgiving, it was so good some other family members joined me and skipped regular pie. These factors totally work for me.
Put in saucepan:
2 cups milk
3 TBLS corn starch
1/3 cup sugar**
2 tsp Pumpkin Pie spice (up to 1 Tablespoon would be okay really)
Stir in 1 small can pumpkin (plain pumpkin, NOT pie filling!!)
Put on medium/low heat until bubbly, boil 2 minutes or so, stirring constantly!
Remove from heat, add in 1 tsp Vanilla
Stir well, pour into dishes, or crust if using, chill, serve.
Yummy, and way healthier!
TO be over the top healthier don't use a crust, serve it as pudding.
Filling 95 calories each serving (If split into 8 servings using 2% milk)
If you must have crust, or you are taking this to an event:
I used no-fat or low fat GINGER SNAPS, plus a few graham crackers as well. You can use any combo you want.
1 1/2 cookie crumbs
1/3 cup melted butter (not margarine or butter spread)
Mix crumbs and butter until fully moistened, press into pie pan, bake at 325-350 for 10-15 minutes, remove, let cool.
This adds at least 110 calories per serving and obviously a lot more fat.

** We only use Evaporated Cane Juice sugar, the less processed the better. You can use honey, or regular sugar if you choose.
